Since the beginning of the Don Mayo micromill in 2005, our mission is to effort on maximizing the quality we produce on our farms. We have focused on excellent care, starting from specialized assistance to introducing varieties that improve and diversify cup-level qualities.
For 19 years we have trained our collaborators in the stage of coffee harvest, they understand that they are a fundamental part of the process and therefore they know the importance of a 100% harvest of mature cherries (with them we initiate the first quality control). This goes hand in hand with a clean process, using high technology and a rigorous quality control at each stage, which is documented and result in complete traceability.
This is how, year after year, thanks to different varieties, processes and micro-regions, we can obtain a diversity of flavors and attributes in the cup, and be able to offer variety to our customers.
Since 2008 we started our participation in this event and we have been successful COE finalists in 31 occasions; 11 times we have been in the top ten, highlighting a 3rd place in 2008, first place in 2009, and presidential awards in 2016 and 2018. With this continuity we reflect our interest in maintaining quality.
For two years we have been part of the NAMA CAFÉ program, a certification that guarantees the proper use of all coffee by-products. In this way we improve our way of producing, and also makes us being part of this country goal to be carbon neutral by 2020. We are proud to be part of this project because it is a way to take care of our planet while we grow our golden bean.
