History tells that Malacara coffee was grown in the slopes of the Santa Ana Volcano since 1888. Since then, it is known that this farm has kept the 100% Bourbón, shade and strictly high grown characteristics that make honor to its reputation. Grown at 5,000 feet above sea level, the microclimate achieved by the conditions of weather and soil make this land perfect to grow a very special coffee with a lot of distinct flavors, well known to be one of the best coffees produced in Central America. Cafe Malacara as a brand has helped position this coffee on an international level since the 1920´s, when the Alvarez family´s coffee started entering the European market. In 2003, at the first Cup of Excellence held in El Salvador , this coffee was awarded with the Presidential Award with 90.73 points. Some of the practices that put together the excellence of these coffees are the high gourmet standards in which it is picked and processed: Skillful and experienced hands pick the fruit in their optimum ripeness stage and then select it to avoid green or defective cherries and other organic matters. The lots are selected and processed individually to guarantee their tradability and authenticity. Jose Guillermo Alvarez and Maria de los Angeles Alvarez de Murray are the owners of Pergamino, S.A. de C.V. These two siblings have also continued the family tradition to support the workers that live and work the land, recognizing their hard work with a just salary and proper housing. They also receive health care through a clinic located inside the farm, and also have a school for the education of the young ones. The family also promotes and supports the LIBRAS DE AMOR program, (www.librasdeamor.org) working with the coffee communities inhabiting the Santa Ana Volcano, giving them nutritional help, and enhancing the quality of life in the area. The winning lot was selected specifically from a plot that has been really consistent for its quality and flavor during the last years. Since they work on gourmet standard basis, they can achieve traceability of every lot that is received and processed at the mill. As owners of this farm we are very proud that, once again we are able to participate in a Cup of Excellence auction, and being considered one of the best coffees form El Salvador . Since the beginning of this program in 2003, 8 different lots from Malacara have been auctioned, and this is a great way of proving ourselves in time. Our expectations from the future are to continuously exceed our quality and to worthily represent our country and our industry.
