History of the farmSitio Santa Fe
is a part acquired from a traditional coffee-producing farm that
abandoned its activities. In the year 2001, 30 hectares of coffee were planted. It is a crop that
to date is very productive and has coffee of excellent quality. Coffee processing systemThe coffee is harvested
when very ripe, with a maximum of 10% green cherries. It is picked in
cloths and transported on the same day to be pulped and then spread in a
thin layer on a paved courtyard where it remains for 5 days, being raked
many times per day.After 5 days on the courtyard the coffee is collected in
a rotating dryer to complete the drying. When it reaches 11% humidity,
the coffee is transferred to rest boxes, where it stays for 15 days. After this period it is processed and sent to the cooperatives
warehouse where it is separated by screens and prepared for
commercialization.
