San Jose People has cultivated coffee in this land since 1860, Arnold is fourth generation, his great grand father started planting coffee in El Jicaral Region, Only the second in the area, out of a fistful of people that started around the country. The original farm was founded by Mr.
Pablo Paz, Arnolds great grand father. He works and lives of his coffee knowledge, land and production. This farm has been worked personally and is the economic source, for his family , he has 3 permanent employees and 18 temporary during harvest. Arnold fertilizes twice a year in the months of June and october , He likes to incorporate pulp as fertilizer besides the coffee formula. He does his farms weed control by hand, applies tree pruning, with selective and sanitary purposes, also regulates shade. He does a very active sampling for plagues and pest, because bin that region broca has appeared. His harvest starts in january until the end of april sometimes, collecting only the red cherries, his pickers do the picking along with people from the community. then he moves his crop to wet mill, . Using the less water possible from a protected water source coming directly from the mountain. Fermentation takes place in cement tanks, an average of 48 hours, under close supervision, after washing he uses atechnique know in Africa as soaking he lives the washed beans in crystal clear water for 24 hours, making sure all the mucilage is removed from the bean. Then the coffee is taken into cement patios to dry than excess water, after that, the coffee goes into solar dryers, the green house kind, for 7-10 days, until reaches 12% moisture content. after its dry, the coffee beans go to oak boxes to rest at least two months. He says his success lays in picking only the red cherries, training the pickers and other workers, follow a protocol for the milling, drying and resting of his coffee. He and his family and workers are aware of the protection of the environment and give the proper process to pulp and residue waters. They are involved in wood producing trees projects, specially avocado.
