Overview
Agroinversiones Salba S.A. de C.V. (a partnership), has owned Santa Elena farm since 1997, and it is represented by Filadelfo Baires. It is estimated that in the last hundred years the main crop of this farm has been coffee. The main varieties are Bourbón and Typica; there are some Pacas trees in some areas that encounter strong winds. This farm is on very steep mountains with coffee trees that are around forty-five years old. There are 3,500 coffee trees per hectare all shade grown. Filadelfo a third generation coffee producer has extensive experience in coffee growing and processing. He ran one of the largest mills in the country, which enabled him to learn every aspect of the business and he understands coffee buyers needs. He is retired now from that side of the business and is concentrated on the producing end. Filadelfo moved with his family to the farm living one of the most peaceful environments you could think about. Focusing on producing the best quality possible, Filadelfo makes sure that the cherries are picked at their perfect ripeness and taken immediately to the mill which is in the farm. He makes sure that each lot is carefully handled from the wet phase to the patios and finally the dry mill. Santa Elena farm ranked in13th place in 2004 COE event. Filadelfo has been carrying out extensive cupping sessions to determine the best lot. Filadelfo maintains a wildlife reserve area on the farm that counts with diverse wildlife. Among his dreams and projects is to make the farm into an eco-touristic place.
