History of the farm
The FAL Holdings Participações Ltda group bought the Santa Izabel property in 2012. At the time, it belonged to Marco Antônio Suplicy. Since then, quality has been added to the farm with new infrastructure, planting of new varieties, results have been seen in winning the BSCA 25- year quality contest and FAL is vying for more coffee quality titles. The farm is part of the FAL Group, which has a coffee sector among its investments, and is vertically integrated with two farms, Santa Izabel and Monte Verde, two warehouses, FALCafe Ouro Fino and FALCafe Pinhal, a roastery in Brooklyn, New York, USA and three coffee shops that serve coffees from the farms, among others.
Coffee processing system
All of the coffees picked on the farm are processed in the wet method and separated in the washer by lots: Pulped Natural 1, Pulped Natural 2, De-Pulped Under Ripe, Under Ripe, Raisin (Floater 1), and Tree Dried (Floater 2). Then the coffees dry for 3 days on the patio, and then 3 days in the mechanical dryer until reaching 11.4% humidity. The small lots are dried entirely on the patio.
Concern about quality
Quality of the beans begins with the choice of variety in the field and health of the crops. All picking is done over cloths and cherries that fall to the ground are removed. The workers on the patio have taken quality courses at SENAR and inspectors follow the entire drying and lot separation processes. There is worker who is responsible for the post-harvest sector and handles separating, classifying and cupping the lots after they finish drying. She relies on the experience and help of a professional Q-Grader, as well as on a process of complete traceability.
