Los APENINOS –Las Delicias Estate farm is located in the Ilamatepeq Mountain Range, in Canton Palo de Campana, one of the most emblematic areas for good quality Coffee from El Salvador . At the same time is one of the uppermost areas of Coffee growing in El Salvador .
The Cup of Excellence Lot comes from a plantation area which is planted with the Red, Yellow, Orange Bourbón an Kenya (sl-28).
The farm is worked all year round based on a “protocol ” which defines all the works that will be made on the farm, depending on strategic planning of the plantation. For example we define the work by its order, the shadow pruning method to use,the coffee pruning, the wind barriers pruning period, the renovation method defined for a 5 year period, the fertilization formulas depending on soil analysis, the cleaning strategy and all of the works involved on the farm.
These defined protocol make us to have a tracking document of the development of the farms which gives us a support for traceability.
In our management program we define the harvest time as the most important period for the success of the characteristics of our coffee which results in good, clean and delicate cup.
The result of the good harvest method gives us the opportunity to process our coffee with a good beginning. We believe that the most important actor in this process is the people that makes the harvest.
Our coffee is depulped the same day that is harvest an for the Kenyan Process is fermentation in Tanks for 22 hours, then washed three times and we leave it again for 18 more hours soaked in clean water then is sun dried in clay patios, they are hand moved every 30 minutes getting 16 moves in a day, after the fourth day is put together for the night rest, then moving it 16 times a day until it gets to the normal humidity to put it in the warehouse, more than checking its humidity by the moisture measurement equipment we use an eyeful check for consistent appearance.
As a social responsibility we are promoting a program “happypeople” which is based on happiness on what you do, we encourage our team to find happiness in our daily basis work. What we have done is to see smiles every where. We believe that happy people works better and productivity can be accomplished.
As a family we are involved the farms periodically. The farms are supervised by an strict plan every week, to manage the plan defined after the harvest period. We see our collaborators as part of our team, every body is conscious of the goals and objectives defined.

LOS APENINOS is an area of FINCA Las Delicias, Cup of Excellence winner in 2003.
The farm has been cultivated with coffee since the 1950’s with association of Flowers specially Callas and Bird of Paradise, because of climate conditions. CAFESCAL our sister Company, had been commercializing the coffee of this farm in the past years. The opportunity of buying the farm came in September 2014. So knowing the quality of coffee that the farm produces we decided to create a sister company and we did it. Know it is incorporated in the CAFESCAL Group which runs the farm and its process.
