Los Pirineos
The farm is located in the east part of El Salvador, in the town of Berlin, Usulután, the cultivated are of coffee is 80 hectares, with altitude of 1350 to 1550 Meters above sea level.
The farm owner is Gilberto Baraona, who is a 4th generation coffee farmer, and has been in the Baraona family since 1889.
Los Pirineos has been several times CoE winner, and also the coffees from the farm has been used several times by worldwide baristas, for national and world competitions. Currently world coffee baristas champions, Tim Wendelboe, and Sasa Sestic, are buyers of coffee from the farm. The specialty coffee potential from this farm was first discover by Taroh Suzuki, owner of Saza Coffee in Japan.
The farm is an experimental farm, with a coffee genetic bank with approx. 70 varietals, and currently more than 16 coffee varieties are being planted, also was selected in 2001 as the cradle for the development of the F1 Centro America coffee variety, and currently is in the process of being the first certified coffee farm in seed production by the WCR in El Salvador.
Currently the primary varietals in production are: Bourbon Elites, Pacamara, and Pacas. The farm process washed, honeys, and naturals, with natural and mechanical fermentation process.
This coffee microlot is a red pacamara, a red honey process, dry in raised African beds with full sun for 12 days.
The farm provides permanent employment to more than 70 persons, and all proceeds from the COE, are re-invest in the farm and its workers.
