History of the farm:
Sítio São Francisco de Assis was inherited from my parents, Paulo Coli and Adila Coli, in 1995. Nowadays, it is administered by my husband Paulo Lúcio and my brother Alvaro Coli, being that we belong to the familial group “Sítio da Torre.” Located in the municipality of Carmo de Minas, in the micro-region known as Mantiqueira de Minas (IP), with coffee crops varying in elevation from 1100 to 1200 meters. The predominant varieties are Yellow Bourbón, Yellow Catuaí and Acaiá.
We have decided to continue investing in coffee growing, as we are the 4th generation on this specialty coffee path in Carmo de Minas. We are constantly modernizing and perfecting the planting, harvesting, and mainly post-harvest techniques, that is, we are completely focused on producing natural and pulped natural coffees, in high-quality micro-lots.
In the year of 2013, Sítio São Francisco de Assis was the champion of the 14th Cup of Excellence – Early Harvest, with a score of 92.09 points.
The coffee cherries (ripe) are selectively hand-picked and transported twice per day to be washed, and shortly afterwards they are spread on cement patios in fine layers, being raked around 20 times per day, until reaching 11.5% humidity, then they are stored in wooden rest boxes to rest for 30 days. The job is quite arduous, it requires much work, however, it is rewarding to see our lands producing our “green gold,” as it was called in times past, with quality, always also thinking about the preservation of the environment.
