Overview
Mr. Gilmar, owner of Fazenda Passagem Funda, recently began to grow coffee using the family farm system as an income option. Along with other coffee growers, he is committed to producing the highest quality beans. The property is located in the municipality of Piata, Chapada Diamantina region, Bahia , where temperatures range between 2º a 18º C in the winter at high altitudes ideal conditions for growing coffee.
Coffee Processing
System Every care is taken in the processing, starting with preparation of the soil to plant the seedlings. Selective harvesting is practiced: only the ripe cherries are picked, in keeping with the technical recommendations for obtaining high-quality beans. The newly picked cherries are carried to the pulper twice a day to prevent fermentation. They are then spread out on a patio to dry in thin layers (about 4 cm). The dry coffee is then processed and stored.
