José Bernardes Santana, a coffee producer since 1984, owns and is responsible for the administration of Fazenda Pedra Redonda. The property is located in a region with elevation varying from 980 to 1090 meters, which provides an excellent environment for coffee growing.
The soil is predominately moist, dark red, fertile latosol. Concerned about preserving the ora and fauna in the region, José Bernardes Santana maintains preserves of Atlantic forest on the Farm, in addition to being dedicated to foresting native species, for this counting on a supply of saplings and the assistance of the Instituto Estadual de Floresta, a Minas Gerais government agency. Planting and harvesting are done by hand with the goal of creating jobs in the region; the farm has 30 full-time workers and during harvest season this number increases to one hundred, all registered according to labor laws.
After being harvested, the coffee is washed in water that is completely recycled through the use of several settling tanks. Next the beans are taken for drying on suspended or cement patios, where they are separated according to quality. Management of this phase receives special attention in order to preserve the quality and characteristics of the beans.
After bring prepared on the farm, the coffee goes to Armazéns Gerais Carapina in Elói Mendes, where each lot receives its identification number.
