The farm cultivates coffee under shade without agrochemicals. We harvest just mature cherries and coffee is classified by hand. The water used come from clean rivers. The drying process is using screenings during the morning from 8:00 am to 11:00 am and from 3:00pm to 6:00pm to get a better and homogenous drying process . The coffee dried is also classified by hand.
History
From the náhuatl local language Kosauh-tlan: "Yellow place" or "Golden place". The municipality receives the name “De Carvajal” in honor to the governor “Angel Carvajal Bernal”. It is located in the mountains of Veracruz State in the following geographical coordinates: 19° 20' latitude north and 96° 59' latitude west.
Its weather is tropical with high humidity and an average temperature of 19 °C. Its annual pluvial precipitation is about 1,160 ml.
