History of the farm
Edu Leandro Melo, 25 years old, a native of Campos Altos, was educated as a civil engineer, but left his profession to continue his family’s passion: coffee. Edu’s story as a coffee producer began with his great grandfather, who was a coffee farmer in the city of Campos Altos. The farm passed on to his grandfather who subsequently passed on this passion to his father, who did not think twice about continuing to grow coffee. In 1995 the producer’s father planted the first six hectares of coffee and, since then the fields have been expanded, always investing in quality. The properties are located in a privileged location in Campos Altos and Pratinha in the Cerrado Mineiro region. The mountainous terrain and elevated altitude favor the cultivation of specialty coffees with unequaled aroma and flavor. The family values and respects the entire forested area around the farms and encourages their workers to preserve the environment. The coffees pass through a rigorous quality process, from the first stages of production in the fields, to lot preparation in post-harvest processing, resulting in a high quality product.
Coffee processing system
The lot was processed in the following manner:
1. Picked mechanically;
2. Washed to separate ripe cherries, which make up this lot, from floaters;
3. Spread on the patio in 15 cm layers and raked for 2 days;
4. The lot was piled still humid for 48 hours, during which natural fermentation occurred;
5. The coffee was again spread and raked until it reached 12% humidity;
6. It went directly to the rest box and rested for 13 days before being milled.
