The producer Vinicius Jose Carneiro Pereira cultivates for many years the coffee farms on the inherited lands that today make Fazenda Moinho. The propriety is located on the city of Olimpio Noronha, on the South of Minas Gerais, where the average altitude is 1.100 meters.
Coffee processing system
The cherry grains are selectively picked on cloths, to avoid contact with the soil, and transported immediately to the washer, then peeled. The coffee is then spread on a yard for drying under the sun, process that takes around 15 days, and after, clean and sent in lots for storage on the cooperative.
Quality concern
For making a quality coffee there is constant accompaniment during all the process by an agronomist engineer hired by the cooperative.
