Sitio dos Coli, part of the Sitio da Torre family group, is located in Varmo de Minas, in the Mantiqueira de Minas geographical indication region. Until 2010 the farm was run by the producer's husband, Paulo Coli. After he passed away, the producer's son, Alvaro Antonio Pereira Coli took over and began focus on producing specialty coffees.
The region has exceptional climate and mountainous terrain. The elevation of the farm ranges from 1200 to 1300 meters. This set of perfect factors, together with the over one-hundered year coffee producing tradition, enable the production of the finest coffees in Brazil. The family is committed to and has great respect for the environment, as they are sure that this interaction will always bring positive, gratifying results.
The coffee was picked by hand and taken to the drying patio where it was washed and pulped on the same day. Then it was dried to 11.5% humidity and stored in wooden rest boxes for around 30 days. Finally, it was processed and taken to the Cocarive warehouse.
This lot in particular was spread on African beds, where it dries for 12 days. later it was dried on a concrete patio for six days until reaching 11.5% humidity.
The farm's coffees are analyzed in the Cocarive laboratory by a team of experienced professionals who are ready to help and to bring the coffees to the most demanding buyers around the world. The family is very grateful to its clients, which it sees as an extension of the family and as continuing their work.
